The Don Sabino Micromill is nothing less than the coffee dream of a father and son, where every drop of coffee is a small masterpiece - even if the process seems "simple" at first glance. Don't be misled by the founding date, 2011, because Steven Vargas and his father have been dreaming in coffee for a long time. Their several small plantations host exciting varieties: Villa Sarchi takes the lead, but Catuai, Caturra, Gesha, SL-28, and a bit of Mokka can also be found among their crops. On the Vargas drying beds, for years, we could only admire coffees processed by the Natural method, but lately, Steven has been experimenting a lot with Honey processing.
